Traditional native fare was originally limited to a few indigenous edible species but Polynesians introduced the basics of taro, breadfruit, sugarcane, bananas and livestock to the mix and Western elements took the ball and ran with it, creating ranches and dairy farms and cultivating vast plantations of sugarcane, pineapple, macadamia and the like. Today, Asian influences contribute to exotic crops and smaller interests grow a profusion of fresh fruit, flowers and vegetables all over the islands. Regional produce and specialties are there for the tasting and are to be found in abundance in local markets and roadside stalls doused in colourful variety and dripping with goodness.

Seafood naturally is also a major part of the culinary stockpot and some of the ancient fishponds of the monarchy are now being restocked with fish for more egalitarian distribution. Macadamia farms, coconut groves, fruit orchards, flower gardens, vegetable plots, sugarcane fields, and dairy farms flourish in the ideal conditions afforded by the Hawaiian Islands. Most of the producers of the raw ingredients necessary to the creation of sumptuous culinary delights conduct tours of their operations with the opportunity to tempt the tastebuds with tastings, or indulge in pure decadence at more substantial sittings.

Hawaii is prone to celebration at the drop of a hat and festivals everywhere feature food and drink as a focal point of any significant event, kalua pig being the centrepiece of any decent luau in town. The Kona Coffee belt on the Big Island gives rise to a 10-day festival in fragrant acknowledgement of a strong hit of caffeine while Kona Brewing Company does likewise in reverence of a good drop of ale. The East Maui Taro Festival ably demonstrates 101 things to do with taro, from traditional poi to taro tempura. Gourmet samplings of fine fare are similarly par for the course at events such as A Taste of Lahaina and the Kapalua Wine and Food Festival.
